10escalopes fines de dinde

20tranches fines de jambon cru

30oignons Borettana Hugo Reitzel

1bocal de poivrons grillés Hugo Reitzel

1bouquet de persil

Huile d’olive

Sel, poivre

Comment préparer

Egoutter les oignons borretane et les poivrons. Emincer le tout grossièrement.

Laver et ciseler le persil. Ajouter au mélange oignons/poivrons.

Disposer les escalopes une à une sur des morceaux de papier film. Saler et poivrer la viande.

Agrémenter les escalopes d’un peu de mélange d’oignons et de poivron sur la viande. Rouler pour former un boudin. Nouer le papier film à chaque extrémité. Disposer dans un plat perforé. Répéter cette opération jusqu’à épuisement des ingrédients.

Cuire au four vapeur à 80°C durant 15 minutes. Laisser refroidir.

Oter le papier film et entourer chaque boudin de jambon cru.

Huiler une poêle et y dorer les ballotines sur toutes les faces. Découper en rondelles et servir avec une salade de jeunes pousses.
