100 g de mini poivrons Hugo Reitzel
2 c.s. de vinaigre de Jerez
1 c.s. de paprika doux
10 feuilles de coriandre ciselée

L’indien :
1 bocal de courgettes suisses au curry HUGO
200 g de yaourt à la grecque
½ jus de citron
1 c.s. de curry fort

Le terroir :
30 champignons suisses HUGO
2 concombres suisses HUGO
2 échalotes ciselées
le vert de deux oignons nouveaux

Comment préparer

Couper la baguette en tranches de ½ cm d’épaisseur. Les badigeonner d’un peu d’huile d’olive. Dorer au four 5 minutes sur chaque face. Réserver.

Pour l’ibérique : Débiter les poivrons en morceaux. Ajouter les perles de poivron, le paprika, le vinaigre de Jerez et la coriandre. Goûter et rectifier l’assaisonnement en sel.

Pour l’indien : Débiter les courgettes en petits morceaux. Intégrer le jus de citron au yaourt. Saler et ajouter le curry. Plonger les courgettes dans le yaourt assaisonné.

Pour le terroir : Débiter les champignons égouttés en lamelles. Trancher les concombres en gros dés. Ciseler le vert des oignons tiges. Mélanger le tout.

Dresser sur des morceaux de baguette grillée.
